When we came home from our trip on Monday afternoon, we discovered our fig tree was incredibly full, and hanging low. Tuesday morning, Andrew and I spent a good half hour picking (and still aren't done!) We have oodles of fresh figs, and are unable to eat them all. It got me thinking about different fig recipes.

I started thinking about flavours I liked. I saw we had a huge bottle of balsamic vinegar. Bingo.
Reduced Fig Balsamic:
4 ripe fresh figs
1 cup balsamic vinegar
In a saucepan, put in quartered figs. Let cook until broken down and bubbling. Once the figs are broken down, add the balsamic vinegar.
Bring to a boil. Once the vinegar and fix mixture starts boiling, turn down the heat and let thicken. Stir occasionally. Once the vinegar is a thick, syrupy consistency, take of heat and let cool.

That's it! I thought it would make a great salad dressing. My mum threw it on some chicken breast and it was amazing. She wants me to make a larger batch so we can keep it on hand. I imagine it would also taste really good on top of pork, or ice cream even!
I found a recipe for a fig, brie and prosciutto thin crust pizza. I'm eager to try that as those are some of my favourite flavours!
